Spicy Mushroom Tip Pizza (low carb friendly)


300g chicken
400g cherry tomatoes
100g mozzarella
Hot Sauce
4 large flat mushrooms.


  1. Hollow out the mushrooms – cut off stock and use a spoon to scoop out the insides
  2. Pre cook the chicken.  I cut into small cubes and grilled them till they where well done.
  3. Chop tomatoes into quarters
  4. Chop mozzarella into small pieces.
  5. Place mushrooms on a foiled baking tray.
  6. Pre heat oven to 180 degrees Celsius
  7. Layer pizza as follows – tomatoes, cheese, chicken, tomatoes, cheese, chicken, cheese.
  8. Layer hot sauce over top of pizza (can use barbecue sauce depending on your preference)
  9. Pour olive oil into pizza and finish with some mixed herbs (dried basil etc).
  10. Cook in oven for 5-8 minutes.
Macros (approx) – 800 kcal, 100g protein, 35g fat, <10g carbs.
